Montes Sauvignon Blanc Limited
Roasted Beet & Goat Cheese Salad with Honey Dijon Vinaigrette
Serves 2–4
Ingredients
• 3 medium beets, trimmed
• Olive oil, salt, cracked black pepper
• 4 cups baby spinach or mixed greens
• 100 g soft goat cheese, crumbled
• ¼ cup toasted walnuts or pecans
Vinaigrette
• 2 tbsp olive oil
• 1 tbsp Dijon mustard
• 1 tsp honey
• 1 tbsp white wine vinegar or lemon juice
Method
Wrap beets in foil, drizzle lightly with olive oil, season, and roast at 400°F until tender, about 45–60 minutes. Cool, peel, and slice into wedges.
Whisk vinaigrette ingredients until smooth.
Arrange greens on a plate, top with roasted beets, crumble over goat cheese, and finish with nuts. Drizzle lightly with vinaigrette just before serving.

Creamy Pasta with Seared Scallops & Salmon Caviar
Serves 2
Ingredients
• 200 g fresh linguine or fettuccine
• 4-6 large sea scallops, patted dry
• Olive oil and butter
• 1 small shallot, finely minced
• ½ cup dry white wine
• ¾ cup heavy cream
• 30 g grated Parmigiano-Reggiano
• Salmon caviar, for finishing
• Fresh chives or parsley
Method
Cook pasta in well-salted water until al dente. Reserve ½ cup pasta water.
Season scallops with salt and pepper. Sear in a hot pan with olive oil for 1–2 minutes per side until golden. Remove and keep warm.
In the same pan, melt butter, sauté shallot until soft, deglaze with wine, and reduce by half. Add cream and simmer gently. Stir in cheese and a splash of pasta water if needed.
Toss pasta with sauce, plate, top with scallops and a small spoon of salmon caviar. Finish with herbs.

Wild Mushroom Risotto
Serves 2–3
Ingredients
• 1 cup Arborio rice
• 4 cups warm vegetable or chicken stock
• 250 g mixed mushrooms, sliced
• 1 small shallot, minced
• 2 tbsp butter
• 1 tbsp olive oil
• ½ cup dry red wine or white wine
• ¼ cup grated Parmigiano-Reggiano
• Fresh thyme or rosemary
Method
Sauté mushrooms in olive oil until deeply golden. Set aside.
In the same pan, melt butter and cook shallot until soft. Add rice and toast for 1 minute. Deglaze with wine and reduce.
Add warm stock one ladle at a time, stirring gently, allowing liquid to absorb before adding more.
When rice is creamy and tender, fold in mushrooms, cheese, and herbs. Season to taste and serve immediately.

Soft Cheese Board with Honey & Seasonal Fruit
Serves 2–4
Ingredients
• Soft cheeses such as brie, camembert, or chèvre

Method
Bring cheeses to room temperature. Arrange on a board with fruit and crackers.
