The Malbec Argentino is a flagship wine, offering deep layers of blackberry, cassis, violet, and subtle spice, supported by refined tannins and a long, structured finish.

Slow-Cooked Beef & Vegetable Stew

Ingredients (serves 4):
500g beef chuck or stewing beef cut into cubes
2 tablespoons olive oil
1 onion cut into wedges
3 carrots cut into batons
1 cup green beans
2 cloves garlic minced
2 cups beef stock
1 cup red wine
1 tablespoon tomato paste
1 teaspoon fresh thyme
1 bay leaf
salt and black pepper to taste
fresh parsley for garnish.

Method:
Heat olive oil in a heavy pot over medium-high heat and sear the beef in batches until browned on all sides. Remove and set aside. In the same pot, add onion, carrots, and garlic, cooking until lightly softened.

Stir in tomato paste and cook briefly, then return the beef to the pot. Add red wine and allow it to reduce slightly before adding beef stock, thyme, and bay leaf. Bring to a gentle simmer, cover, and cook for 1.5 to 2 hours until the beef is tender.

Add the green beans in the final 10–15 minutes of cooking. Season to taste and serve warm, garnished with fresh parsley.

Gorgonzola & Roasted Heirloom Carrot Tart

Ingredients (serves 4):
1 sheet puff pastry
200g gorgonzola cheese, crumbled
1 cup ricotta
1 bunch heirloom carrots trimmed and peeled
2 tablespoons olive oil
1 tablespoon honey
1 teaspoon fresh thyme
salt and black pepper to taste
handful of edible flowers or fresh herbs for garnish (parsley, chervil or thyme)

Method:
Preheat the oven to 400°F (200°C). Roll out the puff pastry slightly and place it on a lined baking tray, scoring a border around the edges.

In a bowl, mix the ricotta with a pinch of salt and pepper, then spread it evenly over the pastry base. Scatter the gorgonzola over the top.

Toss the carrots with olive oil, honey, thyme, salt, and pepper, then arrange them over the tart. Bake for 20–25 minutes until the pastry is golden and crisp and the carrots are tender and lightly caramelized.

Remove from the oven, allow to cool slightly, and garnish before serving.

Mushroom Stroganoff with Pappardelle (vegetarian, can be vegan)

Ingredients (serves 2–3):
250g pappardelle pasta
2 tablespoons butter (use vegan butter to make it vegan)
1 tablespoon olive oil
1 small onion thinly sliced
2 cloves garlic minced
300g mixed mushrooms sliced
½ cup vegetable or beef stock (use vegetable stock to make it vegan)
½ cup sour cream (use Tofutti sour cream to make it vegan)
1 teaspoon Dijon mustard
salt and black pepper to taste
fresh rosemary or thyme (or both) for garnish.

Method:
Cook the pappardelle in salted water until al dente, then drain and set aside. In a large pan, heat butter and olive oil over medium heat, then add the onion and cook until softened.

Add garlic and mushrooms, cooking until the mushrooms release their moisture and begin to brown. Stir in the stock and allow it to reduce slightly, then lower the heat and add the sour cream and Dijon mustard, stirring until smooth and creamy.

Season to taste, then toss the cooked pasta through the sauce until well coated. Serve immediately, garnished with fresh herbs.
