Undurraga Brut — Fresh, Bright & Effortlessly Drinkable
Undurraga Brut is a vibrant Chilean sparkling wine known for its lively bubbles and refreshing character. Expect notes of green apple, citrus, and a touch of floral freshness, balanced by crisp acidity and a clean, dry finish.
Light, versatile, and incredibly easy to enjoy, it’s the kind of bottle that works just as well as a welcome drink as it does alongside food. In a warm climate like Turks & Caicos, it truly shines when paired with fresh seafood and bright, citrus-driven dishes.
Which brings us to one of our favourite ways to enjoy it…
Grilled Prawn & Mussel Salad with Fennel & Citrus
Ingredients (serves 2):
10–12 large prawns, peeled and deveined
1 cup cooked mussels removed from shells
1 small fennel bulb thinly sliced
2 cups mixed spring greens such as arugula or frisée
1 cup cherry tomatoes halved
6–8 fresh basil leaves
2 tablespoons olive oil
juice of 1 lemon
zest of half a lemon
1 teaspoon honey
salt and black pepper to taste
Method:
Heat a pan or grill over medium-high heat. Toss the prawns with a little olive oil, salt, and pepper, then cook for 2–3 minutes per side until lightly charred and just cooked through. In the same pan, quickly sauté the mussels for 1–2 minutes with a touch of olive oil to warm them through.
In a bowl, combine the spring greens, fennel, tomatoes, and basil. In a separate small bowl, whisk together the olive oil, lemon juice, lemon zest, honey, salt, and pepper to create the dressing.
Toss the salad lightly with the dressing, then top with the warm prawns and mussels. Serve immediately, finishing with an extra squeeze of lemon if desired.

Fuller in style yet still fresh, it offers a rounded mouthfeel with enough acidity to keep it vibrant and food-friendly. It’s a versatile white that pairs beautifully with dishes that have a bit more richness while still benefiting from brightness.

Tuna Tartare with Citrus, Olive Oil & Crispy Potato
Ingredients (serves 2–3):
200g sushi-grade tuna finely diced
2 tablespoons extra virgin olive oil
1 teaspoon lemon juice
1 teaspoon lime juice
1 teaspoon lemon zest
1 tablespoon finely chopped chives
½ teaspoon sea salt
freshly cracked black pepper
a few drops of truffle oil if desired
6–8 kettle-style potato chips or thin crispy potatoes
Method:
Place the finely diced tuna in a chilled bowl. Add the olive oil, lemon juice, lime juice, lemon zest, chives, salt, and pepper, then gently fold to combine, being careful not to overwork the tuna.
If using, add a very light drizzle of truffle oil for additional depth. To serve, spoon a small amount of the tartare onto each potato chip just before serving, ensuring the chips remain crisp and the tuna is fresh.

The richness of the tuna and olive oil is balanced by bright citrus, while the crisp potato adds texture. The Chardonnay’s body complements the tuna, while its acidity keeps everything fresh and clean.
Penfolds Bin 149 — Bold, Structured & Unmistakably Refined
Penfolds Bin 149 is a powerful Cabernet Sauvignon blend that brings together the richness of Napa Valley fruit with the structure and winemaking heritage of Penfolds. The result is a bold, full-bodied wine with layers of dark berries, cassis, and plum, complemented by notes of oak, spice, and subtle earthiness.
Firm tannins and a long, structured finish make this a wine that truly comes alive alongside food, particularly dishes with depth, richness, and a touch of char. It’s a statement bottle, ideal for slow dinners and memorable evenings.

Herb-Crusted Lamb Chops with Garlic & Rosemary
Ingredients (serves 2–3):
8 lamb chops (rack cut)
2 tablespoons olive oil
3 cloves garlic minced
1 tablespoon fresh rosemary finely chopped
1 tablespoon fresh thyme chopped
1 teaspoon Dijon mustard
1 teaspoon sea salt
½ teaspoon black pepper
optional squeeze of lemon
Method:
In a bowl, combine the olive oil, garlic, rosemary, thyme, Dijon mustard, salt, and pepper to create a marinade. Rub the mixture evenly over the lamb chops and allow them to sit for 20–30 minutes at room temperature.
Heat a grill pan or skillet over medium-high heat. Cook the lamb chops for 3–4 minutes per side for medium-rare, adjusting slightly depending on thickness and preference. Remove from heat and allow the lamb to rest for 5 minutes.
Serve warm, finishing with a light squeeze of lemon if desired.

Plantation Cut & Dry Coconut Rum — Tropical, Fresh & Effortlessly Relaxed
Plantation Cut & Dry Coconut Rum is a modern take on coconut rum, crafted using natural coconut infusion rather than artificial flavouring. The result is clean, balanced, and aromatic, with notes of fresh coconut, light vanilla, and subtle tropical sweetness.
Unlike heavier, overly sweet styles, it remains crisp and versatile, making it ideal for refreshing cocktails in a warm climate. It’s the kind of bottle that feels right at home poolside, beachside, or anywhere the pace is a little slower.

Coconut Lime Cooler
Ingredients (serves 1):
2 oz Plantation Cut & Dry Coconut Rum
1 oz fresh lime juice
1 oz coconut water
0.5 oz simple syrup adjusted to taste
a splash of soda water
ice
Method:
Fill a highball glass with ice, then add the coconut rum, lime juice, coconut water, and simple syrup. Stir gently to combine, then top with a splash of soda water. Garnish with a lime wheel and a sprig of fresh mint, and serve immediately.

Light, refreshing, and perfectly balanced, this cocktail highlights the natural coconut character of the rum while the lime keeps it crisp. It’s an easy, effortless serve made for warm afternoons and relaxed evenings.
